Sweet, dense, nutty and delicious, Lonza is made from the pork loin muscle and dry cured under salt before being air dried inside a natural casing. It has a fine layer of chili and fennel seeds that add a sweet aroma and a very gentle kick on the tongue. The fine layer of white fat is fresh tasting and finishes clean while the flesh is sweet, dense, tender and well seasoned.
Cut thin for an antipasto plate or you could pop on a pizza just before serving.
